Wash and dry produce. Thinly slice @scallions{4%unit}, separating whites from greens.

Heat a large drizzle of @cooking oil{1%tablespoon} in a #medium pot{} over medium-high heat. Add @scallion whites{} and @bok choy and napa cabbage{8%ounce}; cook, stirring occasionally, until veggies are browned and softened, ~{4%minutes}. Season with @salt{} and @black pepper{}. Transfer to a plate.

Heat a drizzle of oil in the pot used for veggies over medium-high heat. Add @ground beef{20%ounce}; cook, breaking up meat into pieces, until browned and cooked through, ~{5%minutes}. Season with @garlic powder{2%teaspoon}, @salt{}, and @black pepper{}. Transfer to a plate.

To the pot used for beef, add @szechuan paste{4%tablespoon}, @sriracha{2%teaspoon}, @peanut butter{2%unit}, half the @soy sauce{4%tablespoon}, @water{3%cup}, and @sugar{1%teaspoon} (for 4 servings: @water{5½%cup} and @sugar{2%teaspoon}). Bring to a boil, then reduce heat to low; #whisk{} until thoroughly combined. Cook, stirring occasionally, until slightly thickened, ~{3%minutes}. Taste and add as much remaining soy sauce as you like. Taste and season with @salt{} and @black pepper{} if desired.

Increase heat under the pot with broth to medium-high. Bring to a boil. Once boiling, add @udon noodles{12%ounce} to the pot, using tongs to break noodles apart. Cook until tender, ~{2%minutes}.
